Mountain sorrel (Oxyria digyna)

This sorrel is a small plant, growing 30-40cm (1'-1'4") high, and likes a well-drained site. It produces many flattish, winged seeds which can spread about easily, so is liable to self-seed.

The leaves have a lovely succulent texture and lemony flavour. Like other sorrels, it has a strong, tangy lemon flavour and is great added raw to salads or cooked in soups and sauces. The citrus tang works very well with fish, particularly strongly flavoured, oily fish such as salmon or mackerel. It also works well with eggs and is delicious added to omelettes, or wilted under a poached egg on toast.

The leaves can be harvested right through the growing season, but are nicest in the spring.
